This easy-to-make app is always a crowd pleaser. The secret is to roast your own peppers and garlic…and to sneak in a little ricotta cheese. For presentation points, top with a sprinkle of parsley, smoked paprika, microgreens, chopped olives, crumbled feta and EVO.
This dip pairs will with colorful vegetables such as green beans and sweet potatoes, seasonal fruits like apples or pears, along with crackers and breads. It is sure to be a colorful complement to your holiday table this season.
Whipped roasted red pepper feta dip
An easy-to-make app that’s always a crowd pleaser. The secret is to roast your own peppers and garlic…and to sneak in a little ricotta cheese. This dip pairs well with an array of vegetables, crackers or crusty bread, and is an excellent complement to your holiday table.
Ingredients
- 1 lb. Greek-style feta cheese (we like the President brand)
- 8 oz. ricotta cheese (we like the Calabro brand)
- 2 red bell peppers (substitute with store bought roasted red peppers if you prefer not to cook)
- 3-4 cloves raw garlic (substitute with store bought roasted garlic if you prefer not to cook)
- 1/4 cup olive oil (plus a few tablespoons for roasting garlic)
- 1 tsp. lemon juice
- 1 tsp. sliced parsley for garnish
- 1 tsp. smoked paprika for garnish
- 1 small handful microgreens for garnish
- 1 small handful chopped olives for garnish
Instructions
- To roast garlic, place cloves into a pan with a few tablespoons of olive oil and cover with tin foil. Slow cook in a 325-degree oven for 1 hour. The garlic will be nutty and sweet. (You can always roast more garlic and reserve it for other uses, since it’s delicious!)
- Roast red peppers on gas stove or under broiler to blister skin. Once all sides of the skin is black and blistered, place in bowl or bag, cover with plastic wrap and let steam and cool for 10 minutes. Toss away the skin from the pepper (but don't wash it).
- Add red peppers, garlic and all other ingredients except for the parsley into a food processor. Mix until smooth.
- Check for seasoning and chill.
- To serve, top with choice of parsley, olive oil, smoked paprika, microgreens, crumbled feta or chopped olives. Surround the dip with colorful vegetables such as green beans and sweet potatoes, seasonal fruits like apples or pears, along with crackers and breads.
