
We first created these healthy yet satisfying bars while doing a 45-day cleanse. Yes, we went 45 days without sugar, alcohol, grains, dairy or fun. However, these nut-based protein bars coated in Lily’s extra dark chocolate (sweetened with stevia instead of sugar) satisfied our cravings for something sweet – and kept us full. While the ingredients for this snack can get a bit expensive, we tend to find great prices on raw almond butter and vanilla from Trader Joe’s.

Protein nut bar with dark chocolate and sea salt
These nut-based protein bars coated in Lily’s extra dark chocolate (sweetened with stevia instead of sugar) will satisfy your cravings for something sweet.
Ingredients
- 2 cups hazelnut flour (substitute with almond flour)
- ½ cup unsweetened shredded coconut
- ½ cup ground flaxseed
- ½ cup melted coconut oil (melt in microwave if needed)
- Pinch of kosher salt
- ½ cup raw almond butter
- 1 Tbsp. pure vanilla extract
- 10 drops liquid organic stevia
- 1 ¼ bars of Lily’s extra dark chocolate bars
- ½ tsp. ground cinnamon
- Sprinkle of Maldon Sea Salt
Instructions
- In a food processor, add the hazelnut flour, kosher salt, flax seed and shredded coconut. Puree until well combined.
- Add stevia drops and vanilla to melted coconut oil, then add to food processor. Add raw almond butter and puree until everything comes together like cookie dough (the mix should hold its shape when formed in the palm of your hand).
- Line pie dish with parchment paper.
- Using a rubber spatula, spread dough evenly in dish about ½” thick. Once dough is evenly distributed within pie dish, place in refrigerator to solidify.
- While dough is cooling, place the Lily’s chocolate into a glass bowl and break up the chocolate pieces, so they melt more easily. Melt in microwave for 40 seconds or more (watch closely to ensure you do not overheat the chocolate).
- Once chocolate is softened, add cinnamon and fold into the chocolate. Working fast, layer chocolate over cooled dough to cover the whole surface. Sprinkle Maldon Salt on top of chocolate. Place in refrigerator to cool for 20 minutes.
- To serve, cut into desired squares and enjoy as a snack.
